Even though tomato soup is not common in the portuguese gastronomy, I gotta admit I became a fan when I first tried it on an express lunch in our last trip to London. For a quick meal it gave me such a fuzzy warmy feeling inside… delicious comfort food, and perfect for welcoming the new season!
I confess I almost forgot about it until I stumbled upon Cupcakes and Cashmere‘s heavenly looking Cream of Tomato Soup. Needless to say me and the boyfriend just had to attempt doing this and I gotta tell you this has become a favorite for colder days! We followed this recipe and switched the chicken stock for vegetable stock and the dairy cream for a non-dairy alternative to cream (I usually use AlproSoya cream), and turned it into a vegan delight… to die for.
Fresh ingredients are halfway to success…
