Easy Peasy: Vegan Schnitzel Sandwich

One of these days I was running around like a blue-arsed fly between errands, as soon as I looked at the clock it was well past lunch-time. I was starving but didn’t have time to even sit at the table and just wanted to eat something light, and honestly I didn’t really have the time to cook anything substancial. I bet you can relate, we all have days like these! 

These moments are usually when I remember the reason why I keep my freezer full with quick, easy frozen meals. One of our favourite freezer staples has got to be Fry’s Schnitzels, they’re so convenient and easy to cook… Only takes 10 minutes in the pan and you’re done.

I had some rustic italian bread from WholeFoods Market so I whipped up this delicious vegan sandwich with some other ingredients I found in my fridge. Just be creative!

What you’ll need

Italian Sperlonga bread
Fry’s Golden Crumbed Schnitzel
Vegan Mayo (I used Mayola Squeezy)
Spicy Mango Chutney (I used Sharwood’s, there’s also a squeezy version perfect for sandwiches)
Rocket

I don’t know about you but I think everything tastes better in a bun, and this time around the spicy mango chutney definitely took it to another level!
